March Madness

WELCOME
Let’s welcome all our new students who have crossed the floor in 2024.
May dance bring you the joy and fun that our dance family has come to know.

March Madness lives up to its name.
The first 2 weeks of March have come and gone!
It’s a new month and a new season and shortly day light saving will end.
It’s time to prepare for the next few months, time to harvest, time to see the fruits of your labour during the Summer months. If you are a gardener and planted herbs it’s time to dry them and store them for the cold season. If you planted veges it’s time to pickle them and so forth. Get my drift.
I believe in “what you sow is what your reap”. Therefore, I hope your efforts during the summer are now reaping the rewards.

NSW STATE TITLES
Congratulations!
Let it be said the comeback after 5 years was extremely successful.
The new format was a hit!
We loved the added bonus of having Azz and the Cats perform for us and elevate the vibe in the room.
A big thank you and congratulations to all who participated and for amazing team and sponsors who made it happen.
The club was so impressed they rang me Monday morning and as luck would have it we are back in 2025. Save the date 8 March 2025.

There is still some fine tuning in some areas which I will be looking at next year closely.

GOSFORD DANCE PARTY
Our next dance party at Gosford will be held this Friday 16 March. Let’s celebrate St Patricks Day.
Time 6.30pm – 9pm
$8 at the door

CHRISTMAS IN JULY
I have made the decision to avoid the clubs for the return of the Christmas in July due to the exhuberant hiring fees. I am not comfortable in passing those fees to our students.
Minimum venue hire is $1500. Gosford Hall has a great dance floor and accommodates 150 people comfortably. We are in the process of choosing a band and theme and will let you know in the coming months. In the meantime please SAVE THE DATE.

VRDDA STATE TITLES
The next competition on our calendar is the VRDDA State Titles in Melbourne Sat 18 May.
If anyone is interested in entering or would like to spectate and be at our table please let me know by Wednesday 20 March.

12 Days of Christmas

Jingle Bells Jingle Bells Jingle all the way to Christmas Day
I don’t know about you but I’m super excited for Christmas and the summer season ahead!
I love this time of year and the season of giving.  I don’t believe “giving” means lavish gifts and shopping till you’re broke.  Giving your time, being present, listening, making your gifts, making time and spending time with your loved ones is what I love most.
We have missed all our beautiful students and supporters and look forward to the start of 2022.

Our 30th Birthday

As you may now know our 30th Birthday event has been moved to Emu Plains on Saturday 8th January.  We are happy to still have the Lemon Squeezin Daddies performing at this event and we really looking forward to celebrating the New Year as well as our belated Birthday. Please be reminded this event is a sold out event.

Naughty or Nice
Here is something fun you can do to fill in the days of boredom leading to Christmas.
Make a list Naughty on one side and Nice on the other.
List under each heading when you have been naughty or nice and give yourself a point  for nice and subtract a point for naughty.  Total up and if you’re in the positive reward yourself with a gift if you are in the negative give away a gift.

My 12 days of Christmas

Anna’s Favourite Almond Biscotti Recipe Amaretti
Preheat fan forced oven at 180 degrees Line flat lamington trays with baking paper
Crunchy on the outside soft in the middle Makes 40 Amaretti

500 gram almond meal  (5 cups)
300 gram castor sugar (1.33 cups)
5 egg whites with a pinch of salt
3/4 of a small 50ml bottle almond essence
1 teaspoon vanilla extract
½ cup to 1 cup – Icing sugar for rolling biscuits

Method
1.Whisk 5 egg whites room temperature with pinch of salt until almost merengue texture. Add almond essence & whisk again.
2.In a separate bowl add almond meal and caster sugar and mix together.
3.Add the egg mix to the dry mix and mix all ingredients together until it starts to bind using a scraper.
4.Then use your hands to mix and until mix is combined. It needs to be wet soft texture.  Don’t over knead it.
Tip (If its too soft leave mixture in the bowl for an hour)
(You can rest in fridge overnight and make it the next day)

Shape the mixture
Use a tablespoon to pick up mixture and roll into a ball in your hands like a pattie and then roll into icing sugar and place on baking paper on an oven tray.  Flatten them on the top with two fingers.
Tip If mixture is too sticky just place water on your hands to roll the ball or shape as horseshoe and add flaked almonds on the outside
Optional –You can add an almond in the middle
Cook at 180deg for 15 minutes maximum CHECK THEM AT 12 MINUTES
